Thanksgiving in Canada is just about a week away ( just over a month away for our American neighbours) and it is time to consider what you’ll be making for all those hungry family members. Here are two recipes that are sure to be a hit!

Individual Cheese Stratas

12 slices bread
3 medium onions, minced
12 slices processed cheese
1 tsp. salt
Dash of cayenne and paprika
1 tbsp. chopped parsley
3 eggs, beaten
3 cups milk

Arrange alternate layers of bread,  onion and cheese in 6 individual 1  Â½ cup baking dishes having the  top layer of cheese. Beat eggs and  milk with an egg beater; add  seasonings; pour part of the liquid  into each of the baking dishes.  Oven-poach at 350 F about 30  minutes or until custard is just set  and bread has puffed up. Serves 6.

Apple Raspberry Crisp

6 cups sliced apples
1 ½ cups fresh      raspberries
1/3 cup sugar
2 tbsp. flour
2 tsp. cinnamon

Topping:
1 cup quick rolled oats
¼ cup brown sugar
1 tsp. cinnamon
¼ cup margarine

In 8 cup (2 L) baking dish, combine apples and raspberries. In a small bowl, combine sugar, flour and cinnamon; add to fruit and toss to mix.

Topping: Combine rolled oats, sugar and cinnamon. With pastry blender or 2 knives, cut in margarine until crumbly. Sprinkle over fruit mixture.

Bake at 350 F for 55 minutes or microwave at High for 15 minutes until mixture is bubbling and fruit is tender. Serve warm or cold. Makes 8 servings.
