Pancake Tuesday is coming up and we have an interesting and yummy alternative to the standard fair for you! This recipe comes to us from The Avonlea Cookbook and is absolutely delicious:
May Bailey’s French Apple Pancakes~
¾ cups of flour
½ tsp salt
2 tbsp sugar
1 tsp baking powder
½ tsp grated lemon rind
2/3 cup milk
1/3 cup water
Optional: powdered sugar and Maple Syrup
Sift ¾ cups of flour with ½ tsp of salt, 2 tbsp of Sugar and 1 tsp of baking powder. Beat 2 eggs, and then add 2/3 of a cup of milk, 1/3 of a cup of water and ½ tsp grated lemon rind. Beat together and set aside while you prepare your apples. Mince 3 apples into a fine hash. Fry in a little butter and sweeten to preferred taste. In a skillet , fry very thin pancakes. Once the pancakes are brown on the underside, spread a layer of the apple hash and then pour another then layer of pancake batter over top. Flip pancakes and brown on the freshly poured side. Serve with powdered sugar or Maple Syrup.
