With the temperatures dropping, you may be yearning for some fall vegetables. Though pumpkin and squash are the most popular fall vegetable options, why not go for a classic and have some carrots?
Carrots are a completely underrated but delicious root vegetable. Rich in antioxidants and Vitamin A, carrots are also a healthy choice. Did you know that though carrots are available year round, the natural season is late summer and fall? Here’s another fun fact: carrots were actually first grown for their leaves and seeds, not the actual root.
They are versatile because they can be stored for several months in a refrigerator and there are some creative ways to include carrots in your food. Here’s our recipe for Seasoned Carrots which make a great side dish for roast chicken or another meat main dish.
2 tbsp butter
5 medium carrots, coarsely grated (3 cups)
2 green onions, finely chopped
1 sprig rosemary, finely chopped
Salt and pepper to taste
- Melt butter in a large frying pan.
- Add the carrots and cook on high heat for 30 minutes, stirring constantly/
- Stir the remaining ingredients and cook 1 minute.
- Season and serve hot.
